Ack - haven't been around in a while!

A lot has been going on! We got back from a trip to Tennessee on Sunday which was FUN. We went with the whole family and stayed at a cabin in the great smoky mountains. We went to Dollywood and walked on some fun trails and did lots of G-friendly activities. She loved the aquarium, so we're definitely going to have to find some others in the area to go to.

Anyway, I finished reading The Happiness Project book and I'm trying to be more proactive in my life to bolster my own happiness.

One silly goal is to try and create my own blog. I want to relearn coding and styling and how it all works so I bought the following domain:

I just started playing around with themes and content, but it's fun to have something new to play around with in the evenings when G goes to bed!

On the finance front - we have a contractor coming to look into the first floor bathroom addition. We have a few loved ones who have a hard time going upstairs to use our only bathroom in the house. I figure for their sake, the ease of potty training G, and bolstering our home value it would make sense to go through with it. We'll see how much the contractor quotes us tomorrow..

    Fun! I just joined a blogging website theflamingvegan.com, where you write blog posts and if they get top-rated you get paid $10. I don't think I'll be aggressive enough marketing my posts to make money, but it'll be fun to try and come up with posts once in awhile.

    Do you know any good vegan cheeses? My daughter is allergic to cow's milk and she used to LOVE cheese. So now I'm trying to find an alternative and the mozzarella-like one I bought wasn't good at all. I can't remember the brand name right now, but if you know of any, send them my way! Smile

    My favorite is Daiya. It tastes good (though not much like real cheese) and it melts on pizzas, in casseroles, etc.

    It's expensive but nice. Comes in shredded form in three varieties -- Italian, cheddar, and spicy cheddar (maybe it's Jack?) If you can't find it in your area, can be ordered online at veganessentials.com.

    I keep it in the freezer after I open it, so it will last longer. (I'm the only vegan in my household so it takes me a while to get through a pack.) It thaws just fine.

    Galaxy brand made a string cheese that's nearly vegan, might have casein or some other ingredient. I haven't seen it around in while, but I used to get that as a snack.

    Sounds like a nice trip to get away to Tennessee. I like that state, but it's just too hot and humid to lead me to want to spend a lot of time there. I hope that you are able to find a good option for getting the downstairs bathroom done! It will be nice to have the insurance of both toilets when you are working with a toddler.
