Loves me some lasagna!

So while on maternity leave there's certain things I promised myself I'd accomplish. I had hopes of becoming a bonafide cook and being able to make a few scrumptious dinners for my family. So far the only thing I can make well EVERY time without fail is lasagna. Suppose it's good that I can make ONE delicious meal, but it's a little discouraging that I'm not the super chef I expected after 6 weeks at this. Ohhhh well, I guess it's going to take some time!

Anyone have some SIMPLE delicious recipes for me to try???

    When I was your age, I didn't have even one yummy recipe I could count on to turn out well, so I think you are off to a fine start. Smile
    Here's a simple yet yummy dish I have learned to make:

    Ingredients
    Boneless chicken breasts
    several pkgs frozen italian beans
    can of stewed garlic tomatoes
    fresh garlic

    1. Turn your electric skillet on high, add enough oil to cover the surface. Cook chicken breasts 15 min or so. Do not cover.

    2. Reduce heat to simmer. Turn breasts over. Put frozen italian beans right on top. Add can of stewed tomatoes. Crush fresh garlic and add. Season as you like. (I like to sprinkle some black pepper and some chili powder on top).

    3. Cover and let it cook an hour or so. I like the beans to be soft, not crunchy.

    It comes out so good, the chicken practically melts in your mouth. The italian bean/tomato concoction is very flavorful too.

    I usually serve with ranch mashed potatoes, which are simply plain old mashed potatoes with a packet of dry ranch dressing mix blended in. The potatoes taste GOOD and they look kind of pretty with flecks from the ranch dressing mix. (I tried this once with french onion soup mix, tasted good, but the potatoes were brown.) Everyone who has ever eaten my ranch mashed potatoes has raved about them, and they are so easy.

    Marinate chicken pieces in soy sauce and garlic... bake at 350 for an hour. DH's favorite and so easy. I usually serve with steamed fresh veges and brown rice (baked a la Alton Brown,www.foodnetwork.com).

    DH was just saying this morning he was craving lasagna!

    Great spaghetti sauce -- Brown a pound of ground beef, drain, add a quart of canned tomatoes and one can of tomato paste, sprinkle oregano, basil and red pepper on top and add three cloves. Cook over low heat for a LONG time -- stir occasionally and just watch until it reaches the consistency you like. Salt to taste. My family LOVES this spaghetti sauce!
